幾百年前,鹽比黃金更貴重,如今這種調味料已經失寵了,因為人人都知道,鹽的主要成分鈉會提高血壓,同時增加罹患心臟病與中風的風險。


儘管如此,美國的鈉攝取量依舊太高。根據美國聯邦政府所發布的飲食指南,健康者每日鈉攝取量的上限為兩千三百毫克,相當於一茶匙的鹽。對於已罹患會因鈉而惡化之疾病(如高血壓)者,及五十一歲以上的民眾,美國心臟協會則建議每日上限為一千五百毫克。不過,美國人的平均攝取量超過正常人建議攝取量的三分之一,每日高達三千三百毫克。

事實上,一天只要攝取兩百毫克的鈉,就足以滿足健康身體所需。攝取過多的鈉會導致


水分滯留體內,對心臟及血管帶來額外的負擔。


最近,哈佛大學、加州大學舊金山分校與加拿大的西門菲莎大學三間頂尖大學的專家,在《高血壓》雜誌聯合發表一份報告,指出美國人的飲食如果能夠穩定減少鈉含量,在接下來的十年,可以拯救多達五十萬人的性命。如果鈉攝取量減少百分之四十(約每日兩千兩百毫克),可以拯救二十八萬到五十萬人的性命,如果降至一千五百毫克,那麼在未來十年,將有七十萬到一百二十萬的人可免於一死。


其中一名作者指出,只要開始降低飲食中的鈉含量,身體便會逐漸開始想吃不是那麼鹹的食物,也就是食物的正常味道。大約只要六周時間,低鈉飲食就會往下調整人體對鹹味的接受度。


芬蘭人早已證實減鹽飲食有益健康。自一九七○年初期,芬蘭全國上下開始推廣減少食鹽攝取量,結果中風與冠狀動脈心臟病所導致的死亡率,減少了百分之七十五到八十。

鈉不只出現在食鹽中,味精、蘇打粉、泡打粉……等烹飪材料中也含有鈉。不過鹽(氯化鈉)依然是罪魁禍首


美國人所攝取的鹽分,有八成左右來自食品加工廠與餐廳廚房,根據美國疾病控制與預防中心的資料,美國人吸收的鈉有百分之四十以上來自十種食物,其中排名第一的是麵包,雖然麵包味道並不特別鹹,但一般人的麵包食用量遠遠高於其他九種高鈉的食物(醃肉、披薩、家禽肉、湯、三明治、起司、義大利麵、肉、薯片及爆米花……等零嘴)


幸好,近十年來食品廠商開始積極推出低鈉或減鈉的商品,購買時只要仔細檢視營養成分表,選擇含鈉較低的產品,假以時日,對身體健康一定能有正面幫助。


自己在家動手做菜則更容易調整飲食中的鈉含量。你可以運用各種香菜、香料與胡椒來加重食物味道,減少食鹽用量。新鮮香草比較昂貴,但比起乾燥香草味道更為濃郁,所以不妨在陽臺窗架種個幾盆,方便做菜時取用。另外,加入味道辛辣的蔬菜(如芥菜),亦能為菜肴增添風味。

南瓜炖牛肉-潤肺止咳的菜譜
【材  料】
牛肉、

南瓜、

姜片、

青蔥、

洋蔥、

食用鹽少量
1.南瓜洗淨切薄片;洗淨牛肉, 切塊,在開水裏飛一下撈出瀝乾待用;

2.湯鍋中放入牛肉塊、姜片,加水,大火煮沸,改小火煮45分鍾;

3.倒入南瓜片,加蓋小火再煮20分鍾至南瓜、牛肉軟爛;
    加入食鹽攪勻調味即食。

天涼養生湯品及功效


天氣漸漸涼爽喝個湯品補補身

湯不宜晚上喝。提醒,肉類煲湯較油、熱量高,不適合晚上食用,選在上午或中午吃比較好。
  雞湯抗感冒
  雞湯,可加快咽喉部及支氣管膜的血液循環,增強黏液分泌,及時清除呼吸道病毒,
        緩解咳嗽、咽幹、喉痛等症狀。煲製雞湯時,裏面可以放一些海帶、香菇等。

        食譜建議

        蒜頭雞湯:蔥姜蒜枸杞放入雞腿一塊煮即可

        香菇雞湯:蔥姜蒜枸杞加鮮姑跟雞肉一塊燉煮


  
        魚湯防哮喘
  魚湯中含有一種特殊的脂肪酸,它具有抗炎作用,可以治療肺呼吸道炎症,
        預防哮喘發作,對兒童哮喘病最爲有效。

  
        排骨湯抗衰老
  骨湯中的特殊養分以及膠原蛋白可促進微循環,50-59歲這10年是人體微循環由盛到衰
        的轉折期,骨骼老化速度快,多喝骨頭湯可收到藥物難以達到的功效。


  
        牛肉湯中放番茄
  煲牛肉湯時,放一兩個番茄,可以增加湯中番茄紅素的含量,
        而且果酸能嫩化牛肉纖維,使肉質更鮮美。

味噌雞肉菇湯
【材  料】
去骨雞腿肉。白菇。紅蘿蔔。佛手瓜。綠色葉菜

蔥。姜。白洋蔥

調料:味噌雞精

做法




1:雞腿肉切小塊,佛手瓜,
紅蘿蔔、蔥、洋蔥切小丁,

       
2:將雞腿肉煎炒一下,然後放入所有的配菜加水下去用小火燉煮。

 3:關火後放入味增攪拌均勻即可,

1.蔬果汁富含營養:真

  當你榨汁的時候,營養素損失不多。綠葉蔬菜做的汁富含鎂,鎂對能量代謝起着至關重要的作用。一杯漿果、柑橘,或者猕猴桃汁能爲身體提供100%甚至以上的每日所需維生素C。維C是一種能保護肌肉在運動中免受損失的抗氧化物。
  
2.蔬果汁能解毒:假

  喝果蔬汁不能清掃體內毒素,如農藥。實際上,你的身體本身就能做自我排毒的工作。
但是,果蔬汁能提供一些抗氧化物,隨着這些物質的累積,或許能保護機體免受有害物質在體內長期積累而造成的傷害。

 I have known Phoebe for 5 years.  I should say she helped me been through ups and downs of my life a few times.
